Barrell Craft Spirits Bourbon

For those of you who have asked, we'll be putting out another release of our Barrell Craft Spirits Bourbon later this fall. This iteration is a very similar profile to the 2019 release, but slightly higher in proof with a brighter, peachier finish. We've been fine tuning this blend since January and it's finally ready.

What's New Barrell Bourbon Batch 020 is now on shelves across the country. This batch was blended from a selection of barrels from Tennessee and Kentucky. We started with 10-year-old barrels with a lush, prominent fruit profile and balanced them with 14-year-old oak-forward barrels resulting in a complex bourbon with an engaging brightness. Sweet but not excessively oaky, this bourbon opens fruity and softly spiced while a floral side builds over time. Its flavor is focused but complex, with notes of Oolong tea and forest floor leading to a finish of punchy fruits and racy minerality.

Coming up next is Barrell Bourbon Batch 021. Barrell Bourbon Batch 021 is the culmination of two separate projects used to contrast one another. The first is a blend of 10-year-old barrels from TN, IN, and KY. We sorted these barrels into 3 groups by their most defining characteristics: one group of the most corn-forward and buttery barrels, one group of the woodiest barrels, and one group of easy-drinking lower proof barrels. The result was three different ingredients, each designed to bring a particular aspect to the final product. ​

The balancing of these three ingredients proved difficult as the woodier ingredient so easily dominated the other two, but also brought a viscosity and mouth feel that we found very intriguing. Ultimately, we chose to integrate 18 carefully chosen 14-year-old barrels into the final blend. This allowed us to keep the dry, woody, and palate coating characteristics we loved so much in the 10-year-old blend by accenting them with a fruitier, gentler 14-year-old component. The result, Barrell Bourbon Batch 021 is a wonderfully autumnal bourbon, built on a dry toasty backbone with hints of butter and fruit layered in for complexity and contrast.

American Vatted Malt Barrell Whiskey American Vatted Malt is a hit. We're proud to be the first to showcase the growing category of American single malt with our blend of exclusively American single malt whiskeys:

Nose: A bright and flavorful distillate takes center stage, summing thoughts of clover, fern, rosemary and dill. As it opens, lager and gruyere transform into maltier notes of brioche and coffee cake. In among this distillate-driven profile are fruity notes of hard cider, dried fig, cherry cordial and waxy orange zest. A firm oak presence shades in some maturity, lending cherrywood, peppermint oil and clove. Gradually, nearly everything is overtaken by slowly building hardwood smoke.

Palate: Cucumber, clover and chartreuse make for an herbaceous entry. Beneath its bright grassiness lays a sweet core of molasses, molé, fig newton and coconut milk. What begins as an earthy, aleppo pepper spice evolves into mulchy peat smoke.

Finish: Surprisingly creamy notes of orgeat and crème de menthe don’t quite overshadow the more anticipated clover and anise hyssop.

Be on the lookout for some of our very limited Private Release Rum barrels. Each release is a unique blend of rums from Barbados, Jamaica, and Guyana, as well as Rhum Agricôle from Martinique. Once created, these blends are married in single casks, many of which were previously used for other spirits and/or wines, including Sherry PX, Canadian Rye, Calvados and Amaro. Each barrel has a different rum blend and a unique finish. You can see the list here.
